Thank you, Anita!!

Chef Anita makes me spectacular meals from menus I select but one of the things I love about having her is the meals I make with her leftovers.

This time she made a fabulous chicken and apple dish with this heavenly sauce.  I had that on Tuesday and there was sauce left over.  I had some storebought mashed potatoes so I put some of them in a dish and poured the sauce over top and put it back in the freezer.

Then she had a wonderful pork dish with a side of buttery roasted artichoke heats. I had hearts to spare so I put them in the fridge in a dish.

Sometimes she makes me great salad dressing but I'm not a huge salad lover so sometimes, instead, I have her bone some chicken. This is a treat because while boneless chicken is easy to buy in the store, I like mine with the skin on and that is impossible to find.   This time she left me two boneless chicken boobs and 4 boneless chicken thighs.

Tonight put 1 chicken thigh with a mix of shredded parm and mayo and breadcrumbs spread over the top, the rest of the chokes and the dish of sauced up mashed potatoes all in the oven and 30 minutes later I had an amazing dinner.
